Dinner Is Ready! Easy Enchiladas

Need an easy go-to dinner? These enchiladas are versatile, tasty, use ingredients that you usually have on hand, and the kids can help prepare them (which means they are more likely to eat dinner!).

Easy Enchiladas
  • 1 lb. ground chicken (can substitute beef or turkey)
  • 1 – 12 oz. bar cream cheese, softened
  • 1- 15 oz. can black beans, rinsed and drained
  • 1 package of tortillas (8-10 total. Use whole wheat, flour, etc.)
  • 1 can enchilada sauce (mild, medium or hot depending upon your taste preference. Use 2 cans if you like it extra saucy.)
  • 8 oz. shredded cheese (cheddar, Colby jack, Mexican cheese blend, etc.)
To make the filling, brown the meat until it's cooked through.  Drain any excess fat and return to low heat. Add the cream cheese and the beans. Stir to combine with the meat.

Spoon filling into the middle of a tortilla. Roll it up and place it into a greased 9x13 baking dish. Repeat for all the tortillas.

Pour the enchilada sauce over the tortillas and top with the cheese. 

Bake in a preheated 350' oven for 30 minutes or until the cheese has melted.

Dinner is ready!

Get the kids involved! Depending upon the age and maturity level of your child, you can have them help add the cream cheese and the beans to the pan (being extra careful near the oven), spoon the filling into the tortilla, pour the sauce, and spread the cheese.
