Easy Chocolate Chip Zucchini Bread

Here is a moist bread recipe to use up all your garden zucchini, and the kids won't even know!

Ingredients:

  • 3 1/4 cups flour
  • 1 1/2 tsp. salt
  • 1 tsp. ground nutmeg
  • 2 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 3 cups white sugar
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 1/3 cup water
  • 1 tsp. lemon juice
  • 2 cups grated zucchini
  • 1 cup semi-sweet chocolate chips
  • 1 cup walnuts or pecans, optional


Directions:

Preheat oven to 350. Spray 2 loaf pans with non-stick spray. Combine dry ingredients in large mixing bowl. Mix wet ingredients including zucchini in different bowl. Fold wet ingredients into dry. Add nuts if
desired. Pour evenly into 2 loaf pans. Bake for about 1 hour or until
toothpick comes out clean.
