When I think of camping, I picture everyone sitting around the campfire at night, having s'mores. But if you're camping for a full weekend, and not just overnight in your backyard, you need to eat healthy food, in addition to those ooey gooey s'mores. Here's a great recipe for roasted vegetables:
Ingredients:
- Chopped Onion
- Chopped Carrots
- Chopped Parsnips
- Chopped Potatoes
- Minced Garlic
- Onion Soup Mix packet
- 1/4 cup brown sugar (optional)
- Olive oil or butter
Directions:
- Heat oil or butter in a large cast iron dutch oven.
- Add all other ingredients.
- Cover and cook over fire for about 1 hr or until veggies are tender.
- Stir occasionally so it doesn't stick to the bottom.
