Roasted Veggies Camp Fire Recipe

When I think of camping, I picture everyone sitting around the campfire at night, having s'mores.  But if you're camping for a full weekend, and not just overnight in your backyard, you need to eat healthy food, in addition to those ooey gooey s'mores.  Here's a great recipe for roasted vegetables:

Ingredients:

  • Chopped Onion
  • Chopped Carrots
  • Chopped Parsnips
  • Chopped Potatoes
  • Minced Garlic
  • Onion Soup Mix packet
  • 1/4 cup brown sugar (optional)
  • Olive oil or butter

Directions:

  • Heat oil or butter in a large cast iron dutch oven.
  • Add all other ingredients.
  • Cover and cook over fire for about 1 hr or until veggies are tender.
  • Stir occasionally so it doesn't stick to the bottom.
