Campfire Pies

Pie irons are very handy for campfire cooking. You can choose from aluminum (lightweight) or cast iron (more durable and longer-lasting), square, or round. You can use them to make all sorts of sandwiches, such as grilled cheese, tuna melt, etc. You can cook eggs in them too and then use the cooked eggs to make a breakfast sandwich. Cornbread and waffles can be made in them as well.  

My mother-in-law has been making campfire pies using her pie iron for many years. We made some the other day over the hot coals of the barbecue grill.

Campfire Pies

Ingredients:

- Bread

- Butter

- Pie Filling


Directions:

1. Preheat the pie iron over a campfire on both sides.

2. Grease the top and bottom of the inside of the iron with butter.

3. Place a slice of bread on each half of the iron and put a couple tablespoons of pie filling on one slice of the bread.

4. Close the iron and trim any edges.

5. Heat over a campfire (or hot coals of a barbecue grill) until lightly browned on both sides.

6. Serve and enjoy!
