Macaroni Recipe: Chocolate Peanut Butter Snowballs

One of my favorite things to do when it snows is bake!  So, when we got our first snow of the season this week, I thought, let's start baking! These Chocolate Peanut Butter Snowballs require no baking and only 4 ingredients, and they are oh, so yummy!

Ingredients:

1 package (8 squares) of Semi-sweet baker's chocolate

1/2 Cup peanut butter (smooth not chunky)

1 tub (8 oz.) Cool Whip

1/2 Cup (approximately) Confectioner's Sugar

36 mini muffin baking cups

Directions:

1.  In a large microwaveable bowl, microwave the chocolate on high in 1-minute increments, stirring in between, until chocolate is completely melted.

2.  Stir in the peanut butter.  Let this cool to room temperature.

3.  Gently stir in the Cool Whip, and then refrigerate this dough for 1 hour.

4.  Shape dough into 1-inch balls and roll each ball in the confectioner's sugar*.  Place each ball in a mini-muffin baking cup.

Store the finished cookies in the refrigerator.  You may need to re-roll them in the sugar if you make them a few days ahead of when you need them.  The sugar tends to dissolve after about a day.

*You could also try rolling the balls in coconut flakes or chopped nuts.

Makes about 36 snowballs.
