Pumpkin Cake with Cinnamon Whipped Icing

Combine two of the great tastes of fall in this scrumptious dessert: pumpkin and cinnamon!

Cake

Ingredients
  • 1 can (14 ounce) pumpkin
  • 1 can evaporated milk
  • 3 eggs
  • Cinnamon, to taste
  • 1 1/2 cup sugar
  • 2 sticks unsalted butter, melted
  • 1 box yellow cake mix
  • 1/2 cup graham cracker crumbs (I used honey Teddy Grahams)

Instructions
  1. Preheat oven to 350 degree
  2. Grease a 9x13 pan
  3. Put the first 5 ingredients in your bowl and mix well (it will be runny)
  4. Pour into greased pan
  5. Sprinkle entire box of yellow cake mix evenly over the top of the pumpkin mixture
  6. Top with graham cracker crumbs
  7. Pour melted butter evenly over the top
  8. Bake for 45 minutes or until an inserted toothpick comes out clean
  9. Serve warm with cold cinnamon whip on top! 

Cinnamon Whip
Ingredients
  • Heavy whipping cream
  • Vanilla
  • Confectioners' sugar
  • Cinnamon
Instructions
  1. Pour ingredients (adjust amounts to taste as needed) into bowl
  2. Whip until the cream stands in peaks
  3. Serve over warm pumpkin cake or other dessert
